If someone has physical access to your device, they also have the ability to access your files without your password. Unless you are using sophisticated full disk encryption, but that makes it more time consuming to gain access.
It will depend on the update.
Either way, If I want to have a windows install, it's either
- in a vm
- on a different physical disk that is kept physically unplugged from the motherboard until it is needed and then I'll plug it in while unseating the Linux drives and any other drives windows does not need access to
- a different computer
Dual booting is fine if you are using 2 Linux OSes.
If one partition has windows installed an update can hijack the Linux partition or remove the grub.
Not an answer to your question, but you may want to reconsider converting to an e-bike.
There are a few different motor types, if your rear fork can't do a hub motor you should look at a bottom bracket mounted motor. I just installed a torque sensing one on my bike and it's great. There are also under seat motors.
As far as the breaks are concerned, it shouldn't really matter. You're probably still just going 20 mph max even with a motor. And while it's true that hydraulic disk breaks perform better, many e-bikes just use mechanical disk breaks which are only a modest improvement if anything to rim brakes. As long as you're not biking off road in the mud or ice and you can keep the wheel clean, rim brakes should work.
I converted and I was able to keep the bike under 8 kilos with more features then I could find in any new e-bike on the market.

It's just a very small increment so it's more useful than ounces for me (maybe this goes back into the whole study abroad thing, although I never did that).
And even though it's all liquid, I find it a lot easier to measure by weight than using a measuring cup or jigger.
Especially if making fresh espresso, I'm going to dial in my shot by weight anyway so I don't make bitter espresso. So I'll have a cheap scale that is accurate within 0.01 grams at the ready.
Place a couple ice cubes in the glass first. Then,
- 15 g absinthe, stir till opaque
- 20 g cocchi Americano
- 10 g grand Marnier
- 5 g hazelnut syrup
- double shot of espresso (mine is dialed in at 36 grams)
Admittedly, it's a bit light on the absinthe.
I also recommend using a German/Austrian absinthe if possible.
