I guess they haven't discovered the button to block communities?

My feed is quite nice after blocking the stuff that doesn't appeal to me.

The problem is that there are so many porn communities that I have to block one every time I open Lemmy.

Yeah I agree, I mean I still mainly browse All. However that's always going to be the price you pay. You want everything, you get everything.

Problem is that the website and clients never remember that I want Subscribed to be the default.

You can change that in your profile settings, and I'd imagine most apps as well.
