It was already remade as The Twin Snakes. I never played it, so no opinion on the game itself. Some people seem not to like it at all, but to be honest, that's expected with Remakes that go a bit beyond. Other than that, I absolutely agree with you; a proper and modern Remake of the first Metal Gear Solid would be awesome. It's my favorite too.
Twin Snakes was a funny, slightly different take. Action cutscenes were very over the top and probably influenced by The Matrix. The map was exactly the same, but the new mechanics from MGS2 broke it in favor of the player. Voice lines were re-recorded and the performances are kinda bad.
TS isn't exactly the definitive edition, but it's still enjoyable. Either way, unlike Snake Eater, MGS1 needs a big redesign if it were remade to modern standards.
The soundtrack got changed a lot too, which I am not a big fan of it (just listening to few tunes).
Oh yeah, I totally forgot.
