Does no one know how to make a roux? If you already had the cheese, I'm sure you had maybe some butter or oil on hand and some flour.

People know how to make one. The real difference here is caring to make one. It adds a noticeable amount of time and effort. In many cases, if the dish isn't outright offensive and you can just shovel it down, then the end goal is achieved.

Don't even need flour for Alfredo. Its just parm, butter, heavy cream (or milk) and the drippings from the meat part (usually chicken). If not, add a splash of chicken stock.
