Do you use cooked shrimp?
Nope, the acid from the lime juice does that for me. Same with the fish, but you gotta give it an appropriate amount of time.
My Whole Foods cart is now at 87 bucks! Thanks. To be fair it’s gonna be a shit load of ceviche. Halibut and whole snapper were the only viable white fish choices. So expensive. Damn. Maybe I should just order some.
I make the best of what I can, with what I got. The salmon was about to go bad and available on a discount. I made a few fillets and froze all but the one I made that night, and the next (that was a month or so ago). You don't need to buy the best shit, to make the best shit.
For example, this is one of my favorite things currently
A simple cabbage salad that this serving size may be in the sub $1 range.
Taste is made, not purchased.
Edit: sorry if I sounded angry or aggressive, not my intention! I just got deep feelings about food.
