You ever see someone do something they have been doing wrong for years and have missed important aspects that concern safety because they learned how to do it from analyzing a database entry on the subject instead of being taught by someone passing down generations of experience shaped through past failures? Because you have.

It looks like he's smoking a load of meat, given the smoke and the dangle of temp proves at the bottom. It's not likely for the BBQ to be that hot, relatively speaking - maybe 250F but probably lower.

It's impossible to tell without knowing the focal length of the lens used. Different camera lenses can make things appear closer or further to each other than they actually are.
