Not sure how to take a good screenshot in this game. It always looks blurry even though its in 2k res with no upscaling.

I haven't played since launch but it looks like you have the dynamic resolution setting turned on (I don't remember if that is the actual name), it's different from upscaling. See what happens if you turn it off.
