I'm not aware of any. IMO the best way to get this would probably be to mod some original joycons with hall effect sticks (quite easy to swap) and ergonomic grips.

Yes I'd agree with this. It's fiddly, but changing the sticks isn't too bad. So glad I eventually changed mine out for hall effect ones after several bouts of stick drift!

How involved is the swap? I'm assuming I'm gonna need to at least do a bit of desoldering
No soldering is required. Just disconnecting and reconnecting some pretty tiny ribbon cables.
Theres an ifixit video on it under 3min. They should also have some written guides on their website which should help a lot.
Here's the guide they have. I had a couple pairs to do it for (myself + my partner's switch) and I think the first one took about half an hour but it gets easier once you've done the first one. The comments that people have left as well are good if you're stuck, there's some techniques in there that work better than some of the stuff in the official guide.
There is no desoldering involved, you just need to be careful with several ribbon cables.
I would just switch out the original sticks with hall effect replacements. It's not too difficult to replace them, just take it slow on your first one so you don't accidentally break anything.
