Not sure I have enough experience with audio subsystems to give a ton of advice, but I do a little bit of music production with bitwig on Debian / kde neon. One thing I've found to be completely indispensable is a little app called qpwgraph. It gives you a live updating representation of the in/out nodes in your pipewire system and lets you patch to your hearts content. Very reminiscent of JACK's patchbay.
You might also look into wireplumber, I think it has some additional cli tools.
Beyond needing to use qpwgraph to fix the occasional goofy default routing, I really haven't needed to do much to keep pipewire working. It feels like a huge upgrade from pulse from both a latency and ease of management perspective. Hope it works well for you!
