I just rode by a Der WienerSchnitzel. It had a sign boasting it's "All-American". Its name is German, for The WienerShnitzel. Please help me understand.

America had many German immigrants in the 18century. They even debated publishing laws in German & English but chose not to.

German was the second most spoken language in the US for quite a long time.

All American probably means that they don’t know it should be "Das Wiener Schnitzel", not "Derβ€œ

There's a Vienna in america too, that's where the Wiener part comes from.
