Shiva Kush. I found it once 10+ years ago and I haven’t had it since. It was a really good one for my long walks.
Bought some "Mimosa X Orange" (or something?) around Christmas which has been particularly enjoyable. I had some Sour Diesel about a decade or so ago that I'm still thinking about, so I'm going to go with the SD lol.

One of the best strains I ever smoked was Golden Goat. Sadly haven’t been able to find it in years
Irie Genetics uses it as his main breeding male. He has a ton of crosses, and I think does a pure golden goat.
Sundae Driver always treats me well.
I always grow white widow because it's hardy and it's one of my fav strains. Any Herer is great too, I love me some sweet piney strains.
I wouldn't say I have a favorite. I think most strains have something to offer but their commercially produced versions are lackluster at best. (This is my opinion not a judgement or an attempt to belittle anyone's weed or favorite source for it.)
The strains I enjoy most don't have names that are easy to share with others because they've been grown and crossed by me for me and I don't bother naming them. I keep records of genetic histories and notes about them based on my own experiences, working the ones that offer the types of relief I'm looking for into the regular growing rotation. As a result I almost always have a number of plants growing from breeders all over the world too just to see what else is out there and if there's something new worth folding into something else I have going.
I'm a firm believer in the entourage effect and I think the more commercialized weed becomes too much gets destroyed and lost in the process. That results in an incomplete picture of what any given strain can be, assuming what you're getting is actually what they're selling/labeling it as.
The best thing you can do is take control of the process. Everything else places too much trust on an industry and suppliers that will always prioritize profit over proper cultivation and handling.
One thing I’m not a huge fan of with a lot of newer strains is how they seem to want to lean it too THC-heavy, which might sound dumb, but the more balanced strains always make me feel better.
I wish I lived in a state where I could grow my own. I have a couple of things that I use it for, so being able to have more control over the development and growth would be ideal.
But yeah, I totally agree. Seems like a lot of the strains have drifted away from their original lineage quite a bit.
Legality is irrelevant IMO, but if you aren't comfortable with it I can understand that too.

I love the old skunky ones! GG#4 is something that I’ll still find once in a while and stock up on. Nothing quite like that smell of a freshly opened bag of skunk imho
