Why do they call them crackers when they are obviously cookies?

Nah, probably because "Animal Crackers" was the original brand name for animal-shaped carbohydrate snacks, and the name stuck.
I deadass don't remember if Animal Crackers were originally actual crackers or just extremely plain cookies. Perhaps both. Quantum superposition of snacks. Crookiers.
And this is even more confusing because now the cookie crackers have cake.
