They aren't getting in your phone. Nobody knows if you can get it back. If police decide it's worth their time and you stay on their ass, I suppose maybe. Personally I'd take the L and move on.

No need to change passwords, but it would be good practice.

Never remove it from find my, which is different than removing it from iCloud devices.

You’re not getting the phone back.
Assuming they can’t turn off find my using various methods, you’ll be spammed threats, likely progressing to death threats, regarding giving up your Apple ID. Ignore them. It’ll be scrapped for parts.
Lesson learned, make backups.
Apple care ? And there’s some cases where the police helps but it’s in an apartment you won’t know who have it exactly so I doubt they will help.
