I bought an Apple Watch from a co-worker that is currently in a metal housing / band. I’m having trouble removing the screws that house the watch and don’t want to damage anything. The screws seem like they don’t want to give and I don’t want strip them trying. Any advice ?

Those front screws are most likely decorative. Check the back to see if there are screws there.

Those are not real screws. You can find several images onlines on how it comes apart, like this: https://poshmark.com/listing/Apple-Watch-gold-metal-case-63b8d998ffb5d0b96ff9b1f2

Just use google reverse image search for more information.

I fully support your decision to remove the watch from this case. And hope like hell you succeed.

This is ugly. But the screws are still better aligned than at any Hublot
