For me the "must-read" classics are Dragon Ball and Detective Conan (aka Case closed).
I would say Rurouni Kenshin is must-read material.

Monster by Naoki Urasawa is one I always recommend. My favorite franchise is Mobile Suit Gundam, and The Origin by Yoshikazu Yasuhiko is a good way to get into the franchise, but I understand mecha isn't for everyone.

Monster looks like its super morally ambiguous, should be an interesting change from the good/bad stereotypes.
Gundam is cool. I watched season 1 of the Witch from Mercury and enjoyed it, but I've been told its not really representative of the tone of the franchise.
