I’m also software engineer, and I prefer double or triple monitor setup. I need to have the variability to have different information on each monitor, and flipping between multiple virtual desktops as I need.
Just better maintainability for me.

I always used to do two duals but I switched to ultra wide after I broke one when I moved because I wanted to see how the other half lives. There's less usable space which sucks obviously, but I use it for work and play and boy howdy gaming is fucking unreal on this thing. I'd say if your main use case is productivity probably duals is your best bet but ultra wide gaming is a completely different experience to 16:9
