easiest is just to get a newer intel i3 with iGPU.
transcodes everything and is very fast at it as well with quicksync. and uses a low amount of power.

you could mount your media as read only :ro assuming you use a container

just copy over your profile backup that you certainly created beforehand
one main question should also be, do you want to selfhost or not.
because plex is not selfhosted imo due to their login servers.
you could use tailscale for that, it should be able to punch through the CGNAT
MacOS and I'm certainly never going away from that. Just perfect for my use case with nice unix base and a great gui. best of both worlds
