Build it, boot your OS of choice from a live USB to verify the hardware all works, then walk away.

Thinkpad X1 Carbons are absolutely flawless in Linux... I've used Gen 5s and now have a Gen 9.
It's endless content for people with short attention spans that don't care about the quality or even really the topic of the content they are consuming... they just want mindless entertainment to occupy their time without needing to make any decisions or take any actions. Or even to stay focused on any one thing for more than a few seconds.
So, of course it's extremely popular.
HDDs are for cheap, not for reliable. Anecdotal, but my personal failure rate with HDDs is around 98% while my failure rate with all forms of flash media (including SSDs) is around 2%.
With 1 TB SSDs being available for as little as $20 (not particularly fast ones but still far faster than HDDs), I don't see a use-case for HDDs at all unless you need dozens of TBs of storage.
