Is there any reason to think the 16 mainboard won't eventually support 256GB of RAM once 128GB SODIMMs are out?

If the CPU supports it, it should be fine. Normally everything is only vetted for the stuff that is on the market.

I had laptops in the past that advertised a maximum of 8GB of memory, but ran without a problem with 16GB, as the manufacturer (Both laptop and CPU) only tested with seemingly 4GB sticks.
