the nuggets are a mix of mashed white or cannellini beans, cooked chopped greens, quinoa, ground flax, a jar of baby food (lol), spices and vital wheat gluten. breaded with vegan buttermilk (soy milk + lemon juice and apple cider vinegar and left to curdle for a while) and whole wheat panko

How long do you leave the vegan buttermilk for?

it goes very fast with soymilk, only a minute or two. I guess I shouldn't have just said plant milk because they don't all work the same. almond and other nut milks don't really work. Maybe pea milk would work as it's another pulse. I will edit my post

we got a ton of it for free from WIC haha it's a great easy way to add a little extra veg to soups etc
