We use deliveryhero for discovery. Most restaurants will then give you a pamphlet to their superior own website.
The Good ones aren't on the delivery apps, because they have enough customers from their own Website and Hotline. At least here

In my area, not all restaurants offer delivery. I believe Glovo has their own couriers that deliver.
I understand that reaching a restaurant directly is better for their business, but it is not always an option. Going to a restaurant is also better (for the environment) than delivery. The same could be said about any service that aggregates something. Like it is better to buy from the manufacturer than from the shop, better to avoid all companies like allegro (e-commerce) but find the company that sells products directly, better to buy plane tickets directly from the airline and better to reserve a hotel by calling it directly. So why do people use all these services?
