I tried smoked chimichurri the other day, you make it normally and drop a lit coal into the sauce at the end and let it sizzle for a little bit. It's pretty good, worth trying with a small batch at least once.

Aren't there charcoal bits in the chimichurri?

Not really. I use lump charcoal and not briquettes though. You do get a little ash but if you blow the coal off before you put it in the sauce, it is minimal.

I think there was a typo there the first time. Well, as a Balkan representative myself, I believe I did.
