Just guessing here, but did you attempt to cook the solids in the sauce? I used to do the same, until I realized I could just fry everything and then pour the sauce over the solids and very briefly stir things up in a hot pan to finish. Onions never minded boiling in the sauce, but noodles, broccoli, and my herbs fucking hated me for doing that to them. Def sauce it last and stir
