I would. In the span of one draft Texas has turned their team from a bottoming out tank job to playoff hopefuls. As always, hindsight ins 20/20, but you can't ignore Stroud's production.
Draft picks are a crap shoot. Look how many teams passed on Rodgers. The best strategy is to maximize your number of picks, because you never know if THAT guy will be good or a bust. Trade down and get more picks to increase your chances of finding someone good. Its not rocket science.

This hindsight hypothetical will need more hindsight, which will only be available after we use this year’s FRP. If we take a qb that turns into our franchise’s savior, the future time travelers are going to punch the current time travelers in the face for ruining our hand and taking Stroud over the colossus we received instead.
It’s also worth noting that the player we draft this year with our own high pick is a player that potentially is out of our reach if we have a baller like Stroud actually getting us wins. So yeah, this question isn’t answerable until we have extra hindsight.
No I would not go back and get Stroud. Just like I wouldn't go back and get Brady.
You're ignoring the play calling in Chicago as well as the players he would not have to help support him. You're making the same logical error as those who whine about us not getting Mahomes as if Chicago wouldn't have squandered the talent on him.
Brady had a confluence of things that worked in his favor...one being the coach he had...two being the number of top ten defenses he had. That had more to do with his success than him being essentially. You could have easily dropped Rodgers, Manning, or Brees onto to those teams and won just as much. They are all superior QBs who didn't have nearly the comprehensive support he had.
Don't misunderstand me....getting the QB right is very important.
It's not more important than the support you place around him though (coaching, scheme, play-calling, offensive talent you surround him with, etc.)

Not trying to pick holes in a hypothetical, but Stroud publicly announced before the draft that he does not want to go to Chicago. He’s close friends with Justin and it would’ve been incredibly awkward for him. Also can you imagine the pitchforks that would’ve come out all off-season if we moved on from Fields for Stroud (without the benefit of hindsight)
No, this team is and has been missing to many pieces for too long long, everybody can try to blame Poles fact is Poles didn’t mess this team up past GM’s already did that. Angelo consistently missed on first round draft picks from 2001-2011 only Tommy Harris who at the time of being drafted they new he had bad knees and he only lasted 3 years, and Greg Olson who they traded for a 4th round pick for no reason besides that’s what Mike Martz wanted. After 2006 he never was able to rebuild the o-line even whiffing hard on 3 offensive left tackles ion 3 1st round picks 3 years in a row. Emery we all know that shit show hiring the wrong coach and only last 3 years. And then you have Pace who constantly missed on 1st round picks and consistently traded away our draft picks to save his job, he’ll Poles first draft he had to stretch and make Chicken Salad out of Chicken Shit because Pace left him with no picks. My point is Poles isn’t dealing with five years of problems he’s dealing with over 20 years of experience GMs mistakes, he can’t fix that in one year.

What's more difficult to find? An elite QB or an Elite WR + Average LT? Of course the first option. Elite WRs are considered dispensable for most NFL teams, so you can trade a pick or get one on FA, that's not the same for QB.
