M3 Max is very impressive. Going to 16 core with 12 high performance cores was huge. Should score over 20,000 on geek bench which is more than any PC laptop chip on the market while using a fraction of the power in silence. The M1 Max was around 12,000.

Since when is blender a “hobbyist” application? I do think it should have more RAM for the price but at the same time 8GB is enough for many users. I edited 4K 10 bit while also using Lightroom on an 8GB M1 Air for years and never had issues. A lot of people looking at a base model won’t even be doing anything that labor intensive.
