I have an Apple Watch Ultra for diving (I’m a marine biologist) and working out, and a Series 9 stainless steel for other occasions.

If I don’t wear my watch but have my phone on my pocket , will it still count the number of steps / calories burnt ? in c/apple@hardware.watch

Depends on the depth. The Ultra can be used for diving down to 130 ft. The other Apple Watches are meant for shallow water.
