How different is Kosher and Halal?

Well, the biggest difference is that kosher slaughter is performed by person trained to kill animals in accordance with Jewish law. Halal slaughter, on the other hand, is performed by a person trained to kill animals in accordance with Muslim law—and they say the name Allah during the process!!!! Otherwise the processes are virtually indistinguishable. Notably, maximization of animal suffering is a key element to both.

This implication that Halal slaughtering processes purposefully maximize animal suffering has real "those savage bloodthirsty arabs" vibes. The methods may not be particularly kind, but let's not pretend what happens to animals in the west is any better. And it's particularly gross and inaccurate to say that religious food laws purposefully maximize suffering.

I don't think that's true - the part about them being virtually indistinguishable. Halal can include bolt stunning which uses significant force to render the animal unconscious

To achieve this in livestock, many Islamic authorities approved different stunning techniques such as a physical blow or passage of an electrical current through the head directly or through an electrified water bath or to induce unconsciousness gradually with a hypoxic or anesthetic gas with different farmed mammals and birds to render them unconscious at the end of the procedure, meaning relatively immediately

These are not always effective and still subject a great many animals to significant pain and suffering.
