Mate, I have more energy and resources than you atm but I've never been able to grow carrots, not even stubby cultivars, so you're doing alright, don't let yourself be your worst enemy if you can help it :D

Tbh except for tiny pots, this weather has been perfect for just letting them manage themselves. All i've been doing is peeping at pots to make sure they're draining ok

I have ‘self watering’ pots and had to pull random mushrooms out.

I wish I had a real garden and the strength/motivation to work it

No i just meant that having mushrooms/mycellium in the soil is often a good thing for the plants :)
