Edit: Wasn't exactly niche back in the day, but I wonder how many people have watched it recently.
Goodbye, Farewell and Amen (the last episode) holds up well as some of the best TV ever made. They really ended on a high note unlike so many more modern series.
If anyone is looking to become obsessed with a niche television show that went off the air years ago about a character that is obsessed with a niche television show that went off the air years ago I cannot even begin to recommend Bojack Horseman enough.

And for me right now that show is Farscape. I don't know if you can call it niche, but it certainly is not very well known where I live. And this show is frelling good. I love it! I love the story, I love the actors, I love all the costumes and puppets, the sets, the effects. It is better than most of the dren studios nowadays produce

The first five and a half seasons are some of the best TV I have ever seen. Then they ran out of books to adapt.
Exactly. It befell the same fate as the first Fullmetal Alchemist series, complete with an insane ending that was improvised and duct-taped to the end of an otherwise perfect series. At least they had enough wisdom to soft-reboot it, so they could finish the series the same way the manga did.
Dragonball Z also gets an honorable mention here, where the animation team was constantly at risk of getting ahead of the manga, so they had to build in LOTS of filler episodes to buy time.

I’ll take this opportunity to push Patriot. The marketing on Amazon made it look like a standard propaganda show “good spy does bad things for good reasons” but it’s actually a black comedy that is beautifully critical of US intelligence and foreign covert action.
"Peep Show" and now also "The Mitchell and Webb Look" because of the former. Both of them are damn good comedies
