Based on my experience with eating cow tongue tacos that sounds really delicious.

I made those too, first time. Cooking the tongue made am amazing broth.

Brings back memories. The old man used to pressure cook beef tongue and then turn it into the most delicious coconut-milk-based curry. Lengua tacos are also super delicious.

Amazing the broth is very rich, meat tender, bd tubers full of flavor.
