Arch, NixOS and openSUSE Tumbleweed are very supported.

I would recommend an Arch based distro if you want to keep it simple. That will give you access to the AUR and compatibility with the arch wiki.

PS: Arch can be very stable, especially if you use an LTS kernel and don't restart during updates.

I'd say go to a local thrift store, if they got an automatic drip machine in working condition for a good price, pick that up.

If you're just getting into something it's always a good idea to start cheap and figure things out as you go

I have also avoided flatpack and the like.

On Arch and other Arch based distros, if something isn't in the community repo it's extremely likely it's in the AUR.

I don't even understand why products like this exist, let alone why they are so popular.

These are less convenient, lower quality, higher cost, have less choice, lead to consuming more microplastic, and generate more pollution

All you should do for coffee is pour hot water on freshly ground and freshly roasted coffee beans.

I can literally buy any coffee, ground any way I want, and brew it with cheaper, safer, and longer lifetime products that use less or no plastic.

Reconstitute some dried mushrooms, like shittake or porchini. You can then take the mushrooms out and then soak the frozen tofo in the mushroom water.

Frozen tofo not only has an interesting texture but it can also absorb more flavor from water/soup.

Grilled over charcoal or smoked can also be great. And can add even more depth to the rich unami from the mushrooms.
