At a previous job, I had to build laptops that would multi-boot DOS, Win95, Win98, and XP, all on one laptop. Our field-tech's software had to have those specific versions of windows for the machines that they serviced, because of how the software interacted with USB and embeded floppy drives.

As a hard-of-hearing person, I need either subtitles, or super-loud volume. But bad sound-mixers in todays movies make everyone mumble right before giant explosions.
And I really hate that Meta fucked up smart-glasses for everyone. We could have had IRL subtitles for people like me on local-only glasses, that don't record people, but they had to make it creepy.

I had half a semester of 'home econ' in my seinor year of High School ~2000. We didn't really cover much that was useful for actually balancing a checkbook. The class was clearly a checkbox that they didn't actually expect us to do anything in.

Agreed. I think they should have pushed for stronger disclosure requirements, but I also realise that isn't actually enforceable.
I also find it very telling that people will talk about the negative parts of AI, but not acknowledge other automation tools that perpetuate the same problems. My experience is that most people's complaints have a real basis, but they are just mis-diagnosed.
The problems seem to be our economic and societal structures, and AI is the new fancy tool that exacerbates those problems. But I've not heard a good reason why AI itself is that problem.
