I'm wondering if anyone has any ideas on what to use the leftover fat with since it is flavoured by the other ingredients

I'm currently dialing in shots mainly by taste and am wondering if timing is important at all and if will it effect the taste for example if I do 1:2 and want 36g out from 18g in will it effect the taste if its under or over 25-30 seconds as long as I'm pulling the expected 36g out?

But it doesn't turn out as good with regular orange sweet potatoes and I live in a regional town and I don't know if my local Asian stores will have them because they don't have websites I can check so I'm wondering is anyone knows which sweet potato type here in Aus is closest to the Japanese sweet potato.
