This does, indeed look like an omelette, but after about two months in the fridge.
I think I made 3eggs that looked like that once too... After about three weeks.
I hope it's actually tasty because the way it looks gives me flashbacks to that one time when I forgot where I put my dirty baking tray and found it like this several weeks later 😆

they really were amazing though i have been wanting more all day.
A lot of times the best food looks like absolute garbage.
Like, shred some really good Parmesan and tell me it doesn’t look like the shavings you’d keep mealworms in for fishing… or just plain sawdust. Tastes great though!

Beans and eggs are good together. If you want to make them look appealing just plate them together instead of mixing them together. Beans under with eggs on top or plated next to each other can both be easily combined by the eater and won't look awful. Flavor wise you get the same result.

that's just empty carbs I don't need and I have a gluten intolerance. That's what the beans are doing in there providing slow carbs and some fiber!

Also tortillas and nachos etc are originally made purely out of corn/maize so they're a good choice.
And I actually found that gluten free nachos keep way longer than their glutened counterpart which are still made out of corn but which have like added starch or smth from gluten containing grain. Like basic Kellogs corn flakes aren't gluten-free.
But if you buy gluten free nachos /corn flakes, they don't get mushy in the same way when exposed to air. Gluten free nacho crisps last weeks and weeks completely edible. Whereas regular crisps go stale in a matter of a few days.
